BBQ Loose Meat Sandwiches

1 onion, diced
3 cloves garlic, minced
2 TBSP vegetable oil

2 lbs ground beef

1 head cauliflower, "riced" (see notes)

Bottled BBQ sauce
Salt and pepper

Sauté onion and garlic over medium heat, then add ground beef and brown it.  Drain off fat.  Add cauliflower, salt, pepper, and BBQ sauce.  Simmer.

Serve as a sandwich.  I served mine on fresh honey wheat bread, with optional cheddar, dill slices, and cabbage kimchi.  Serves about 8

Note:
To rice cauliflower, cut florets off the main stalk.  Put in a blender, in batches, with enough water to allow the vegetable to freely move.  Pulse a few times till coarsely chopped and drain.

Melt in Your Mouth Ribs, From the Grill


These ribs were pre-seasoned from the meat counter, but any rack of ribs rubbed with your favorite dry rub would be fantastic. I followed directions from Mark Bittman, but am now unable to find the exact recipe. He used a pan of woodchips in the bottom of his grill, to get a smoky flavor - I skipped that step. 

The trick to amazing melt-in-your-mouth-ribs from the grill is to light one side of your BBQ, heat up the grill for about 15 minutes, throw your ribs on the un-lit side, and then turn the heat down as far as it will go. This method takes hours (at least 2.5-3), but the results are ridiculous. So tender, the marrow can be chewed out. So well done, the bones practically fall out of the meat. 

I will definitely be trying this with my homemade "char siu" (Chinese BBQ) rib sauce. I'll let you know how it goes!

Whiskey River BBQ Chicken Rap

This is one of my favorite things to order at Red Robins so I felt like making one at home. It's quick, not TOO bad for you, and abnormally, satisfyingly, satiatingly delicious.

Ingredients:
Flour Tortilla
Tortilla Chips (Strips work best)
Chopped Lettuce
Grated Cheese
Chicken Strips
BBQ Sauce

First, take the chicken strips and throw them in a pan with a bunch of barbecue sauce (The BBQ Sauce will condense, so put a lot more than you need). Throw the pan on medium high and stir everything up occasionally, making sure that all the chicken is coated in the thickening BBQ sauce while you get everything else ready.

Throw your tortilla in the Microwave for ~10 seconds, or heat it up on a pan or whatever else you'd like to do.

Now put it on your plate, and arrange some tortilla chips in such a way that you'll be able to rap it up later.

Now take all that chopped up lettuce and throw it on top.



I like a lot of lettuce, keeps the wrap pretty light.

Next grate some cheese on top. I like to make sure the cheese is on top here so that it'll melt when we add the hot chicken, but if you'd rather it didn't melt throw it somewhere else!



Next put in your chicken.



Wrap it up and enjoy a taste sensation!



And oh yes. It is very good :)
