BBQ Loose Meat Sandwiches

1 onion, diced
3 cloves garlic, minced
2 TBSP vegetable oil

2 lbs ground beef

1 head cauliflower, "riced" (see notes)

Bottled BBQ sauce
Salt and pepper

Sauté onion and garlic over medium heat, then add ground beef and brown it.  Drain off fat.  Add cauliflower, salt, pepper, and BBQ sauce.  Simmer.

Serve as a sandwich.  I served mine on fresh honey wheat bread, with optional cheddar, dill slices, and cabbage kimchi.  Serves about 8

Note:
To rice cauliflower, cut florets off the main stalk.  Put in a blender, in batches, with enough water to allow the vegetable to freely move.  Pulse a few times till coarsely chopped and drain.

Wheat Hamburgers (Hamburguesa de Trigo)

These patties are completely meatless, and completely delicious.  I wouldn't say this tastes like a hamburger, but it IS amazingly yummy- you'd be hard pressed to find someone who would turn down one of these sandwiches down.

Wheat Hamburgers
2 cups cooked wheatberries
1 cup chopped mushrooms
2 cloves garlic, minced
pepper
1 spoon mustard
2 eggs
salt

Blend wheat and eggs.  Add remaining ingredients.  Form into hamburger patties and cook in a skillet.

Serve on buns with lettuce, tomato, and american cheese.

Ham and Cheddar Biscuit Pockets

I originally found a recipe for these way back when, in Readers Digest.  (I'm pretty sure I was in middle school at the time.)  The recipe said Grands "thwack" biscuits, and that's what I used.  Hey guess what?  Like most foods in this world, these taste better when you make them yourself!

So.

Ham and Cheddar Biscuit Pockets

Ingredients:
1 batch of biscuit dough
diced ham
shredded cheddar cheese

Roll your biscuit dough thin as you can, and cut large circles (I used a 4" round tupperware.) Really roll these thin- biscuit dough puffs a LOT.  Not paper thin, but definitely pie crust thin.  Place biscuit rounds on a cookie sheet and top with ham and cheese, and another biscuit round.  Pinch the edges shut- make sure there aren't any holes!  Top biscuits with a little more grated cheddar cheese- my husband really likes crunchy cheese, this is his addition.

Bake at 450 for 10-15 minutes, until lightly golden.

The kids and Daddy like to dip these in ketchup.  I prefer a mixture of honey mustard and plum jam.
